When Quest partnered with J. Sterling Morton High School District 201, the district’s dining program was facing serious challenges. Comprising of three large high schools, the program had suffered from declining participation, financial losses, and a failed nutrition services audit.
School Board President Jeff Pesek and district administration subsequently set out to elevate the dining program with a clear goal: create a top-tier experience that reflected the needs, cultures, and aspirations of Morton students.
Together, Morton and Quest launched a multi-year collaboration grounded in shared values and high standards. Their collective efforts led to renewed student engagement, stronger financial outcomes, and a dining experience the community could take pride in.
Over three years, the district achieved a 30% increase in total meal participation, gained financial stability, and strengthened student trust through fresh, scratch-made meals and engaging experiences.

Reimagining the Student Experience
Early in the partnership, Morton and Quest focused on rebranding and elevating the dining environment to reflect the community’s energy and diversity. Five new made-to-order concept stations were introduced, offering customizable meals and up to twelve different entrée choices daily. Scratch cooking and thoughtful ingredient selection anchored menu development, supporting cultural relevance, nutrition, and NSLP compliance. The refreshed atmosphere brought a restaurant-style feel that students were excited to explore, anticipating new specials, flavors, and daily features.
Engagement was central to the district’s vision, with the dining program incorporating carving stations, guest chef experiences, themed events, and even a memorable visit from a Chicago Bears player during National School Breakfast Week. Together, these initiatives helped connect food to community, wellness, and learning.
Commodity and Fiscal Stewardship
With 8,000 students to serve, Morton prioritized both quality and fiscal responsibility. Working together, the district and Quest maximized USDA commodity utilization—achieving 100% NSLP-compliant allocation—and reinvested these savings into equipment, facility improvements, and continued menu innovation.
Through operational efficiency and data-driven decision-making, the district successfully moved from a six-figure annual subsidy to a six-figure annual surplus, enabling future investment and long-term sustainability.
