Quest immediately set out to redesign the program, introducing more daily choices, made-to-order stations, and a sourcing strategy centered on higher quality ingredients. The transformation quickly paid off—participation across breakfast and lunch programs rose by more than one-third, and the entire dining experience became a source of pride for both students and staff.

The Problem

Before Quest’s arrival, Elmwood Park’s food service program was limited in both scope and freshness. Students had few daily options, and most items were pre-cooked or reheated, leading to lower engagement and satisfaction. The program also struggled with staffing challenges that restricted its ability to offer more complex, scratch-made meals.

Menu Improvements and Culinary Variety

Quest redesigned the Elmwood Park dining program to emphasize freshness, choice, and balance. Several made-to-order stations were added to the high school cafeteria, creating a restaurant-style experience that encouraged participation and exploration.

  • Hemispheres: A globally inspired station featuring rotating international dishes that allow students to experience diverse flavors from around the world.
  • Good Greens: A fresh, elevated salad and fruit and vegetable bar offering colorful, seasonal selections.
  • Bread & Bowl: A station focused on scratch-made soups and deli sandwiches, showcasing premium ingredients and creative pairings.

Quest also increased the number of items served daily, expanding the menu to include hot breakfasts, à la carte choices, and higher quality meats and produce. The emphasis on scratch cooking not only improved flavor but also supported better nutrition and presentation.

Enhanced Staffing and Training

Quest retained all existing food service team members and focused on engaging and empowering them through communication, training, and professional growth. From day one, employees were introduced to the vision behind the new program and received hands-on instruction to prepare scratch-made meals at scale.

Recognizing a need for additional leadership and coverage, Quest created new kitchen lead positions at the elementary schools and expanded the high school team from 4 employees and 2 serving stations to 7 employees and 6 stations.

Quest also hosted a comprehensive back to school training session prior to launch, ensuring every team member was confident and equipped to deliver the elevated program. The focus on skill-building, teamwork, and culinary excellence boosted morale and fostered a shared sense of pride in serving high-quality food to students each day.
