The British International School of Chicago, South Loop (BISCSL) serves a diverse, global student community ranging in age from 3 to 18. The school’s leadership sought a dining program that would reflect its multicultural identity while maintaining the highest standards for nutrition, safety, and quality.
When Quest partnered with BISCSL, the goal was to design a dining experience that felt inclusive, engaging, and reflective of the school’s global perspective. The result is a vibrant, culturally rich program that celebrates diversity through food, balances health with flavor, and continuously evolves through active student collaboration.
The Problem
Before partnering with Quest, the school’s dining program faced challenges common to many international institutions. The offerings lacked sufficient cultural variety, leaving many students without options that reflected their own backgrounds or dietary preferences. Menu rotations were limited, and allergen management required improvement to ensure the safety and comfort of all students.
In addition, the school wanted to create a more engaging dining atmosphere that connected students, faculty, and families through shared culinary experiences. There was also a desire to improve participation and financial performance by delivering meals that inspired confidence and excitement.
The British International School of Chicago needed a food service partner capable of balancing international authenticity, strict nutritional standards, and operational excellence. Quest stepped in with a plan centered on inclusivity, culinary innovation, and ongoing collaboration.

Diverse and Inclusive Menus
Quest immediately set out to design menus that celebrated global cuisines and reflected the cultural makeup of the BISCSL community. Today, students enjoy a rotating selection of Indian, Asian, Hispanic, and Italian dishes, each prepared with fresh ingredients and authentic flavors.
Equally important, Quest prioritized dietary inclusivity. The program offers a variety of Halal, vegan, vegetarian, and gluten-free meals to ensure every student feels seen, respected, and well-nourished. In addition, BISCSL maintains a completely nut-free environment to protect student health and peace of mind.
Through these efforts, the school’s dining program became a model of inclusivity—one where students from all backgrounds can share meals that represent both familiar comfort foods and new cultural experiences.
Elevating Quality and Variety
Quest enhanced the dining experience by expanding options and introducing fresh, made-to-order elements. The introduction of grab-and-go selections provided convenient access to wholesome snacks and beverages between classes, while the coffee shop received a major refresh with new drink flavors, weekly specials, homemade pastries, and hot sandwiches.
One of the most popular additions was the introduction of an in-house sushi chef, a direct response to student feedback. The ability to enjoy freshly rolled sushi on campus quickly became a defining feature of the program and a key driver of participation.
