After a very detailed bid was written with exact specifications and expectations, Quest answered the call with a proposal called Quest For Life: Food and Education from the Ground Up. The mission? Reverse the current foodservice trend and return to traditional cooking methods, using responsibly harvested products.
Quest hired Executive Chefs with extensive high-end restaurant experience to come in and define the parameters of the program. They then re-trained the kitchen staff. Box cutters were tossed out and kitchen knives were picked up. The basics were addressed: slicing, dicing, stewing and braising. The kids were brought on board with some fun and unique hands-on educating that helped explain how the food is prepared.
Quest for Life brought many changes. Only fresh meats are used – never frozen. Only fresh produce is used, and special attention was given to local and seasonal fare. No more cans or frozen veggies. Quest works together with the client and students to identify and commit to the specific change that place. A leap forward is taken, and Quest teaches students how to develop a lifelong passion for eating more responsibly.
